Mayonnaise. In cake. Believe it.
This cake is perfect for Halloween because it’s a trick AND a treat. Apparently, this recipe has been around for a long time but I just discovered it (asking my aunt, a fabulous cook, to make one the other day).
You will not taste the mayo. I repeat…you will not.
I ate half of the cake in one day, and I REGRET NOTHING! Mine was a gluten free, vegan version found here (because it’s easier on my currently fragile digestion), but there are lots to choose from.

How fun and festive for the holiday.
I grew up having chocolate mayonnaise cake on a regular basis. Actually, we were a Miracle Whip family, so that’s what was used. I have a friend that I introduced it to way back when and she still, now, 32 years later, insists on having it for her birthday cake.
I’m going to try the gluten free version, since I’m pretty much a grain free baker now.
Denise, it works well with Bob’s All Purpose Gluten Free Flour! Simple and delicious.
